If the end of the rainbow led to these pot o' gold cups, honestly we wouldn't be disappointed in the slightest. Our "cups" are made from box brownie mix (although you can make homemade brownies if you prefer). Then, we decorated these mini treats with a dollop of whipped cream—for the clouds, of course—and a candy rainbow belt. We added sprinkles to really amp up the gold factor, but feel free to decorate these however you pelase!
These bite-sized treats are the perfect addition to your St. Patrick's Day spread, and would be an adorable activity to do with your fam or friends (with some festive cocktails, of course).

Ingredients
Cooking spray, for pan

box brownie mix, plus ingredients called for on box
- 2
rainbow candy belts
- 2 cups
Whipped cream, for decorating
Gold sanding sugar, for decorating
Directions
- Step 1Preheat oven to 350° and grease a 12-cup muffin tin with cooking spray. Prepare brownie mix according to package instructions.
- Step 2Add batter to muffin tin and bake 25 to 30 minutes. Once brownies are out of the oven, press a shot glass into the middle of each, making a shallow cup. Let cool completely.
- Step 3Cut rainbow candy belts into 2"-long strips.
- Step 4Dollop a scoop of Cool Whip into each brownie cup then sprinkle with gold sanding sugar. Place a rainbow candy belt on top, forming the candy belt into a semicircle, like a rainbow.
